This is a customization so you should use Child Theme instead of adding it to the parent theme.
Because this edit will take when you update the new version.
First of all you should use Child Theme for the current theme.
It is included in the package you downloaded from themeforest, you unpack and find to the .noo-organici-child.zip file and install it as a normal theme.

I am not sure what steps you have taken, the blank pages are not included in the demo data. You need to add "elementor addons" for them to work. (You should only install demo data once on the site.)

First, you need to distinguish between:
Archive page and custom page.
- Archive page: The default page to store articles for each custom post type on the site. You just need to create a blank page with the slug identical to the settings, this page will automatically get the post to display.
eg: Job Archive page: slug -> http://prntscr.com/q3my00
Resume Archive Page: slug -> http://prntscr.com/q3n05l
Company Archive Page: slug -> http://prntscr.com/q3n09e
On Jobmonster theme no editing support with this page format.
- Custom Page: You add new a page (and the slug cannot overlap with the slugs above) -> You can use Elementor for this pages.
what is the reason why this translation does not appear (although it has been defined properly in the .po file? is this a theme bug?
