You can change the code in 404.php to redirect the 404 page to another page as you want, or you can use the 3rd plugin https://wordpress.org/plugins/redirect-404-error-page-to-homepage-or-custom-page/ to redirect the page.

When an employer deletes a job offer, the sitemap plugin will update the sitemap. So Google will update the sitemap and remove that link.
I think you can use the sitemap plugin to avoid the 404 URL issue.

All the job search URL https://www.emploi-moto.com/jobs/?s=&category%5B%5D=aprilia will change to https://www.emploi-moto.com/offres-emploi-moto-v2/
Maybe you have to do some custom to change the job archive link.
