I have a few questions please:
1 - We'd like to change "open time" to "Start time" on the frontend and also the backend.
2 - We'd like to change "close time" to "End time" on the frontend and also the backend.
3 - We'd like to change the hour format from 24hr time. We want to use "hh:mm am/pm" everywhere on the site both frontend and backend. We changed it to 12hr in the wordpress settings but the plugin is using 24hr
4 - If we don't add an address or a trainer in the admin, we want to hide those fields on the frontend.
Are these changes possible? Thank you 🙂
If you want change text you can do it via translate theme. And the plugin not support custom setting in admin, the plugin will use site date format in frontend.

What is 'translate theme'? I'm using the nootimetable plugin on a custom design wordpress site. I mean, I'm not using wootheme or anything like that.
So there is not a method to do items #1, #2, and #4?
Sorry, for #1, #2 You can change it via translate NooTimetable with text domain 'noo-timetable'
for #4: Sorry, the theme not support custom it, you can use custom CSS to hide it on frontend.

Sorry for delay reply, You know translate WordPress theme and plugins with PoEdit ? Or you can use Loco plugin to translate.
